Tomato and mushroom flan

400g block savoury pastry

4 tomatoes

3 spring onions

5-6 mushrooms

3 Egg

3/4 cup cream

2 tbsp pesto

Pinch of pepper

2 tbsp grated cheese






1. Preheat oven 200’c

2. Place savoury pastry on the 25cm tin

3. Sprinkle chopped spring onions

4. Place sliced mushrooms on top of spring onions

5. Place sliced tomatoes on top of mushrooms

6. Beat egg, pepper, cream and pesto all together

7. Pour mixture on top of tomatoes

8. Sprinkle grated cheese

9. Bake for 30-35 min
